I eat this almost every day for breakfast. I make a batch on Sunday and it lasts me until Friday. I love it, it’s healthy, tasty and has the right protein/carb/fat ratios to keep me going all day.
4 oz ground turkey (99% lean)
half of the sautéed spinach recipe (about 2 cups)
6 large eggs
2 cups of egg whites (about 8 egg whites)
grated Swiss cheese
Cook the ground turkey in a large skillet, breaking it into small pieces
Once the turkey is completely cooked add the sautéed spinach and stir until the two are completely mixed
In a separate bowl add the eggs and egg whites and beat until they are completely mixed together
pour the egg mixture into the skillet with the spinach and turkey
continue to stir the mixture until the eggs are cooked through and there is no moisture left in the pan.
At this point the entire recipe is 1100 calories. I divide it into 4 separate Tupperware containers and add 1 oz of grated Swiss to each container. Let the containers cool on the countertop before you put on the lids and put them into the fridge.
Including the cheese, each container is 380 calories. I eat one container with 3 corn tortillas each morning for a total of around 525 calories. You could divide the recipe 5 ways if you want to cut the calories a little, but I have learned that eating a solid breakfast really helps me keep my hunger under control in the evenings…
