2 – 10 oz bags of baby spinach
1 8 oz. box of mushrooms (sliced)
1 onion (cut into small pieces)
3 Roma tomatoes (diced into small chunks)
3-4 cloves of garlic (dices)
1 tsp. salt
1/2 tsp. black pepper,
1.2 tsp cayenne pepper
Saute the onions and mushrooms in 1 tbsp. olive oil until the onions have gone clear.
Add the tomatoes and garlic, then begin to add the spinach – about half a bag at a time.
Stir the spinach until it has begun to wilt, then add more until all of the spinach is incorporated into the pan.
Add the salt, pepper and cayenne and stir
Continue to simmer for 3-5 minutes
